ISO Quality Standards
ISO 3632 Classification
The international standard for saffron quality is ISO 3632, which measures three key chemical compounds:
🎨 Crocin (Color)
Measures coloring strength. Higher crocin means deeper, richer color. Grade I (highest): 200+ units.
👃 Safranal (Aroma)
Determines the characteristic saffron aroma. Premium saffron has 20-50 units of safranal.
😋 Picrocrocin (Flavor)
Responsible for the distinctive bitter-sweet taste. Quality saffron has 70-100+ units.

How to Identify Quality Saffron
Visual Inspection
- ✓ Deep crimson-red color throughout
- ✓ Trumpet-shaped threads with wider tops
- ✓ Dry and brittle texture (not moist)
- ✓ No broken pieces or powder
- ✓ Minimal yellow or white parts
Aroma Test
Premium saffron has a strong, distinctive aroma - sweet, floral, and slightly hay-like. If there is little to no smell, the saffron may be old or low quality.
Water Test
Place a few threads in warm water. Authentic saffron will:
- ✓ Release color slowly (10-15 minutes)
- ✓ Turn water golden-yellow
- ✓ Threads remain red (do not lose color)
- ✓ Water should not turn red immediately

Avoiding Fake or Adulterated Saffron
Common Adulterations to Watch For:
🚫 Dyed Corn Silk or Safflower
These are sometimes dyed red to mimic saffron. They lack the characteristic aroma and will release color immediately in water.
🚫 Added Weight
Some sellers add oil, honey, or glycerin to increase weight. Quality saffron should be completely dry and brittle.
🚫 Mixed Grades
Lower grades mixed with premium threads. Look for consistency in thread length and color.
🚫 Old or Expired Saffron
Saffron loses potency over time. Always check harvest date and buy from trusted sources.
